Fiber Foods offers dried jackfruit fibers from East Africa to the vegetarian food industry in the Netherlands, who use the dried jackfruit as a natural fiber to make their vegetarian products healthier and tastier. Currently they use textured soy bean or peas, which gives the balls or burgers a sticky bite and on top of that the texturization of soybean is an energy draining process. Fiber Foods has built a value chain in East Africa, where the jackfruit is harvested and processed with the aim to create opportunities for women. The company wants to further professionalize and scale-up in Uganda. By thoroughly testing and tweaking a production line for the processing of the jackfruit a final production line will make the processing more efficient and form a basis for the business case on what to build in a new factory. This all is needed to be able to keep production up with the growing demand.
